This recipe dresses up store-bought pancake mix with the
flavors of cinnamon and apple. Try serving these pancakes
with a dollop of vanilla yogurt instead of syrup.





INGREDIENTS


⅔ CUP BUTTERMILK PANCAKE MIX
½ TEASPOON GROUND CINNAMON
⅔ CUP APPLESAUCE
1½ TABLESPOONS REDUCED-FAT MILK
NONSTICK COOKING SPRAY
MAPLE SYRUP, FOR SERVING

How to make it



1-In a medium bowl, stir together the pancake mix and
cinnamon. Stir in the applesauce and milk. Mix well.

2-Spray a large skillet with cooking spray and ladle the batter
into the skillet, using about ¼ cup batter per pancake.
When the pancakes begin to bubble on top and their edges
start to firm, flip them and cook for 2 to 3 minutes more,
until golden brown on the second side.

3-Serve hot, drizzled with maple syrup.

Pairing Tip

 For even more concentrated apple flavor, sauté a
diced apple with butter in a separate skillet until softened.
Add 1 tablespoon brown sugar and cook, stirring, until the
sugar is completely melted and the liquid thickens. Spoon
over the pancakes.
